We farm an exceptional specie of shrimp: The Pacific Blue Shrimp (Litopenaeus stylirostris) The Pacific Blue Shrimp or Litopenaeus stylirostris has a very distinct taste.
It is not bland like other species of shrimp and it grows to a larger size compared to the Vannamei.
However, this blue shrimp is not a popular specie to farm. It can be a challenge to produce if farmers don't have full control and maintenance of the grow-out ponds.
This prawn needs high quality sea water and high oxygen levels. The water must also be renewed daily. In order to produce Markea Prawns™ of New Caledonia, we
adopt strict standard during all phases of production from the hatchery to the packing plant. Each of our facilities is independently monitored by local government
agencies to insure that the correct procedures are followed and that we have a quality product for export.

Another key procedure that is crucial to our high quality prawns is our glazing bath during the freezing process at our state of the art packing plant.
This glazing bath allows us to seal in the flavor and freshness of each prawn as if it had just been harvested.
We only produce and sell whole frozen raw prawns (Individually Quick Frozen-IQF). Viewing the whole prawns give the buyer a good indication of overall quality of the production and packing process.
The benefit of keeping the shell and head on preserves the natural flavor and freshness of the product. In addition to our glazing, the shell provides more protection from the dryness and harshness of subfreezing temperatures.
